My Q is where exactly (wich component) the temperature is sampled from on the simple motor controllers, specifically the 18v7 and the 18v25. If possible I would like to move the temperature sensor to another location, either by desolder the sensor (if not internal in STM) or by moving the SMC (most sensitive side) as close as possible to the heat source.

Sorry, I was mistaken in my first post, so I deleted it. The temperature sensor on those boards is actually on a separate chip that I have circled here on the 18v7 and 18v25.
