I want to implement this Coin Register IOT for Vending Machine project. Does pololu have a coin acceptor like the one used in this project? If not, does pololu have something similar?

That looks like a fun project! Unfortunately, we do not make or carry any coin acceptors. It looks like SparkFun carries a couple, one of which looks like it might be similar to the one used in that write-up.
