I’ve searched for current information on whether the Maestro Control Center (presumably the Linux version) will run on MacOS or not. The last posts I found (circa 2017) suggest it does not work, at least not fully. Is this still the case?

Yes; there’s no software support for the Maestro for Mac. (You can find that information under the “Supported Operating Systems” section of the Maestro Servo Controller User’s Guide.)
