For a mechatronics and robotics undergrad student such as myself, what can the Pololu robot teach me? Also, After the line and maze following projects, what can I then tackle which is perhaps more substantial?

As with most robot platforms, the 3pi can be an aid in learning control systems and programming skills. If you are looking for ideas about what you can do with your 3pi, you might take a look at some of the projects people have shared here on our forum.
Additionally, you might look into expanding the 3pi with our m3pi expansion kit and an mbed microcontroller to turn a 3pi into an m3pi robot. You can see additional projects people have done using the m3pi robot on the mbed website.
Alternatively, you might consider something like our Romi chassis for more custom expansion options.
