I’m reading over the documentation for the 3pi robot, and I understand that it manages a constant power for the motors, untill it shuts down.
But what is the battery voltage level at which it shuts down?

Hello, Anders.
The battery power goes to a boost regulator, as you mentioned, and there is no special low-voltage cut-off feature on the 3pi, so the exact voltage that it will shut off at depends on how much current is being drawn. For a general reference I did a quick test. With both motors running full speed, it shut off when the an input voltage dropped to around 2.4V. With the motor’s stopped, it cut off around 2V.
