I was wondering what MOSFETs are used for the Arduino VNH5019 Shield?

Hi, Daniel.

We do not want to commit to a specific MOSFET for that driver, but in general, they should be similar to the 30V DPAK MOSFETs used on our 18v25 high-power motor driver.
