I intend to build a special RC servo with this GM that will most likely (occasionally) have to run near the 6A stall condition of this gearmotor. I would like to use the Jrk controller with a 5 - 7.4 V Lithium type battery. Is there an easy way to modify the Jrk to handle the higher current?

I suggest you consider using our jrk 12v12, though the 21v3 might work if the motor is only stalled briefly, especially if you take extra steps to keep the motor driver cool (such as adding a heat sink).
Please note that stalling a motor frequently or for prolonged durations will generally reduce its lifetime.
