We are using the ACS72981LLRATR-100U3 to measure motor current. (<100A) Our current is in pulses. How do engineers typically handle this? Do you RC low pass filter the pulsed signal coming out of the ACS72981 and then sample that? Or do you attempt to sample the pulses and only care about the samples taken at the peak?

I moved your post to the sensors category since this seems like a better place for it.
Either of those might be okay approaches for reading the current sensor, but it depends on exactly what you are trying to do and other specific details of your setup. It would probably be good to look a sample of readings from the current sensor in a simple system first (no hardware/software filters or averaging involved) or with an oscilloscope to see what you are dealing with and use that to guide your decision making.
